After lurking and searching, I've managed to find most everything I needed to de-uglify the basic graphics of Fable, and much thanks to the community as a whole for that.
However, I can't figure out how to alter the size of the hero's eyes, as by default they're a bit large for his head/my tastes. However, editing the bone files (which has allowed me to alter other parts of his appearance, and face) seems to do absolutely nothing, and a search, both manual and using the search function, of the forums here hasn't really revealed anything on eye resizing.
So, to cut a long story short--could anyone explain how, if it's possible, to make my eyes smaller?

Yes, but that's part of the aging--which would be fine, except I find it rather immersion breaking to look ninety years old while Briar Rose, who was older than me when I first met her, still appears to be in her mid to late twenties (same goes for various wives, your sister, the guild master, maze, etc. etc.)
Therefore I disabled the aging effects--but would still like to de-bug-eye myself.

That did it. After a lot of putzing to figure out the exact scale to use I eventually settled for 1.2 scale with Briar Rose's eyes, 'cause I prefer her color to the blue of the hero.
Thanks a lot.
Wish there was a way to adjust the size of the opening in his face mesh that the eyes fit in, though. Still seems a bit large for his face (and shrinking them further just make his eyes look like cavernous holes of blackness), though they aren't all buggy anymore.
