You can use any modeling tool you want to produce models, but to get those models Fable-ready, you need a tool that exports DirectX, with texture maps, skinweights (for animated models), hierarchy, helpers. Of the ones that I know can do this, Blender and 3DS are good picks. Maybe GMax can too, I don't know.
In any case, your problem is that you are not familiarizing yourself with the Blender interface and controls. Which is okay, it's something I've never bothered to do either.

Some people do the models in one program then make them Fable-ready in another. This will minimize the need to use a tool you aren't good with, since you're only using it to export in a specific format.
Also, the newest Blender doesn't support DirectX - you'll have to download a previous version. See following posts.
