how much can graphics and animations be edited in this game? I'd like to do several things, but I'd like to know firstly where I'll stop. I wanted to create a Darth Vader/Darth Nihilus mod, but apart from the fact that I can't skin, the standard animations are ugly... it is possible to port from other games?

Importing animations isn't possible. What you can do is add animations from npc's to the hero. Although that isn't very easy.

Meshes and textures can be added or replaced.

The models should be in the .x format, with the correct helpers of course. Some model info here.

A mesh controls an object's shape. However, it holds no appearance information. That is controlled by a texture. If I were to put a mesh into a game with no texture, I would be able to fight with it, and do everything that I could normally do, but it would not be visible.
