I wonder if it's possible to add the missing items like normal Wizard Hat (item number 3505 - OBJECT_HERO_HAT_WIZARD) etc. to any shopkeeper's list?

please first search!
it is possible to add an item to a shopkeeper's list with the fable shop trainer.
and there are other possibilities but i don't know them.

A similar post was up not too long ago, so obviously you didn't.

The shop trainer doesn't permenantly add items, and can possibly
screw-up a shop keeper's list.

To "add" the wizard's hat to a shop list, you must change his/her
script.
