Any mods out there that can remove the HUD/GUI?

I don't remember any mod that does that. Although it's pretty much simple to do it yourself: simply open textures.big and make most of the UI related images completely transparent.

Theoretically that should work. Although, I'm not sure if you can edit the transparency setting into lower levels somehow then it would be easier to do and to revert.
