The moonfish uses the CBonusItemDef to achieve that, and the options there are very limited. You have ChangeToDay and ChangeToNight. I'm sorry to say that there isn't a ChangeSkyToRedLikeTorwardsTheEndOfTheGameWhenYoureFightingAl lOfJackOfBladesMinions.

It doesn't change the sky, you see, it just changes the time which in turn changes the sky accordingly.
